If you want to explore older classic mesterpieces, I recommand you Cowboy Bebop, Evangelion, Perfect Blue, Ghost in the Shell and Akira. You can also try some movies like Your Name, Tenki no ko and Koe no Katachi. If you want great recent anime you should try something like Vinland Saga, Devilman Crybaby, Jujutsu Kaisen, Your lie in April or Demon Slayer. Nevertheless, here is a list of recommandations I suggest you to take a look at (most of them are movies or series not longer than 25 episodes) : Starting with these is a great introduction to the anime genre and if you enjoy it I think you will be able to discover lots of other great anime by yourself.
